Salmon Pesto Pasta

Ingredients
  

Protein

  • 2 large salmon filets
  • 1-2 teaspoons olive oil
  • 1 teaspoon lemon juice (from 1/2 lemon)
  • to taste kosher salt and black pepper

Pasta

  • 8 ounces dried pasta

Sauce

  • 2/3 cup pesto (jarred or homemade)
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Preheat oven, brush salmon with olive oil and lemon juice, season with salt and pepper, then bake at 400°F for 20 minutes.
  • Cook pasta in salted boiling water until al dente, then drain, reserving some pasta water.
  • Flake cooked salmon into bite-sized pieces.
  • Mix pasta with pesto, Parmesan, and salmon; loosen with reserved pasta water if needed.
  • Serve immediately, garnished with extra Parmesan if desired.

Notes

For a crispy top, broil the salmon for the last 1-2 minutes of baking, watching closely.
