Rustic Blackberry Galette

Ingredients
  

Dough

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar

Filling

  • 3 cups blackberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Egg Wash

  • 1 egg egg
  • 1 tablespoon water

Instructions
 

  • Mix flour, salt, and sugar; cut in butter until coarse. Add ice water, form dough, chill 30 min.
  • Toss blackberries with sugar, cornstarch, and lemon juice; set aside.
  • Roll dough into 12-inch circle, transfer to baking sheet. Fill center with berry mixture, fold edges.
  • Brush crust with egg wash. Bake at 375°F (190°C) for 40-45 min until golden.
  • Cool 10-15 min, then serve warm with ice cream.

Notes

Use very cold butter for flaky crust. Chill dough thoroughly before rolling.
