Ingredients
  

For the Chicken:

  • 2 pieces chicken breasts, cut into bite-sized cubes
  • 0.5 cup cornstarch
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil (for pan frying)

For the Bang Bang Sauce:

  • 0.5 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 tablespoon honey
  • 1 teaspoon rice vinegar or apple cider vinegar

For the Bowl:

  • 2 cups cooked jasmine or basmati rice
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 0.5 cucumber thinly sliced cucumber
  • 2 green onions sliced green onions
  • 1 tablespoon sesame seeds (optional)

Fresh cilantro or parsley (optional garnish)

Instructions
 

  • Mix mayonnaise, chili sauce, sriracha, honey, and vinegar to make the sauce.
  • Toss chicken with cornstarch, salt, and pepper. Cook in hot oil until crispy, about 3–4 minutes per side.
  • Assemble bowls with rice, vegetables, crispy chicken, and drizzle with sauce. Garnish with green onions, sesame seeds, and herbs.

Notes

For extra crispiness, double coat the chicken with cornstarch.
