Roasted Mediterranean Chicken Thighs

Ingredients
  

Chicken and Marinade

  • 6 bone-in chicken thighs chicken thighs
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 3 tablespoons fresh parsley, chopped
  • 0.5 lemon, juiced lemon juice
  • 1 teaspoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 teaspoon dried oregano
  • 0.25 teaspoon chili flakes
  • 2 teaspoons salt
  • 0.5 teaspoon black pepper
  • 1 lb baby potatoes, halved
  • 1 drizzle olive oil for potatoes
  • salt and pepper to taste

Instructions
 

  • Mix olive oil, tomato paste, parsley, lemon juice, paprika, garlic powder, oregano, chili flakes, salt, and pepper in a large bowl. Add chicken thighs and marinate for 20-30 minutes.
  • Toss baby potatoes with a drizzle of olive oil, salt, and pepper in a baking dish. Spread evenly.
  • Place marinated chicken thighs over the potatoes, skin side down. Cover with foil.
  • Bake at 375°F (190°C) for 50 minutes.
  • Uncover, flip chicken skin side up, and bake at 425°F (220°C) for 30 minutes more until crispy.

Notes

Adjust spices according to your preference. Serve with your favorite dipping sauces.
