  • 4 pieces bone-in, skin-on chicken thighs
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika

Instructions
 

  • Mix olive oil, garlic, herbs, lemon juice, salt, pepper, and paprika in a bowl.
  • Coat chicken thighs with the marinade and refrigerate for at least 30 minutes.
  • Preheat oven to 425°F (220°C). Roast chicken for 35–40 minutes until golden and cooked through.
  • Let rest for 5 minutes before serving.

Notes

Use fresh herbs for the best flavor and ensure chicken reaches an internal temperature of 165°F.
