Instructions
Preheat oven to 400°F (200°C). Toss butternut squash, potatoes, carrots, garlic, onion, and rosemary with 2 tbsp olive oil; season with salt and pepper. Roast for 40-45 minutes until tender.
Meanwhile, heat 1-2 tbsp olive oil in a skillet over medium heat. Add ground beef and cook until browned, about 8-10 minutes. Season with salt and pepper.
Combine roasted vegetables with cooked ground beef. Chop fresh rosemary and stir into the mixture.
Serve hot, garnished with additional rosemary if desired.
Notes
For extra flavor, add a splash of balsamic vinegar before serving.
