Ingredients
  

Vegetables

  • 1 small butternut squash, peeled, seeded, diced
  • 6 yellow potatoes yellow potatoes, diced
  • 3 large carrots, diced
  • 4 cloves garlic cloves, minced
  • 1/2 white onion white onion, diced

Herbs

  • 3 sprigs fresh rosemary
  • 1-2 sprigs fresh rosemary, chopped

Meat

  • 1 lb laura's lean ground beef

Oils & Seasonings

  • 2 tbsp olive oil
  • 1-2 tbsp olive oil, for sautéing
  • to taste Salt and black pepper Salt and black pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Toss butternut squash, potatoes, carrots, garlic, onion, and rosemary with 2 tbsp olive oil; season with salt and pepper. Roast for 40-45 minutes until tender.
  • Meanwhile, heat 1-2 tbsp olive oil in a skillet over medium heat. Add ground beef and cook until browned, about 8-10 minutes. Season with salt and pepper.
  • Combine roasted vegetables with cooked ground beef. Chop fresh rosemary and stir into the mixture.
  • Serve hot, garnished with additional rosemary if desired.

Notes

For extra flavor, add a splash of balsamic vinegar before serving.
