Ingredients
  

Bread

  • 1 loaf French Bread sliced diagonally into about 1/2 inch to 1 inch pieces
  • 2 tbsp extra virgin olive oil
  • 1/2 cup lightly chopped arugula
  • 3/4 lb sliced roast beef
  • 8 oz cream cheese, softened
  • 3 tbsp chopped fresh chives
  • 2 tbsp minced fresh oregano
  • 1/2 tsp coarse sea salt
  • 1/4 tsp fresh cracked black pepper
  • 1/4 cup sour cream
  • 3 tbsp Dijon mustard
  • 1/8 cup mayonnaise
  • 1/8 cup stone ground mustard
  • 1-2 tbsp prepared horseradish to taste; start with 1 tbsp
  • 1 tbsp extra virgin olive oil

Onions

  • 2 large yellow onions
  • 4 tbsp butter

Instructions
 

  • Mix cream cheese, chives, oregano, salt, and pepper for the spread; set aside. Prepare horseradish cream and set aside.
  • Slice bread, brush with olive oil, and broil for 3-5 minutes until lightly toasted. Remove and set aside.
  • Caramelize onions: sauté sliced onions in olive oil over medium heat for 5 minutes, then add butter and cook on low until golden and limp (~20 minutes).
  • Assemble crostini: spread cream cheese, add arugula, caramelized onions, roast beef, and top with horseradish cream. Season with salt and pepper, garnish with oregano and chives if desired.

Notes

For extra flavor, toast bread until golden and adjust horseradish to taste.
