  • 4 fillets salmon (skin-on, about 6 oz each)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 2 cups fresh spinach (baby spinach works best)
  • 1 cup heavy cream (or half and half for a lighter version)
  • ½ cup grated parmesan cheese
  • 1 teaspoon dijon mustard (optional, for depth)
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon fresh lemon juice (to brighten)

Instructions
 

  • Season salmon with salt and pepper, then sear skin-side down in olive oil and butter for 4–5 minutes per side.
  • Add garlic to the skillet and sauté until fragrant, then add spinach and cook until wilted.
  • Stir in cream, Parmesan, mustard, and red pepper flakes; simmer until sauce thickens.
  • Return salmon to skillet, spoon sauce over, and simmer to reheat.
  • Serve with pasta, rice, or crusty bread.

Notes

For a lighter version, substitute heavy cream with half and half.
