Instructions
Season salmon with salt and pepper, then sear skin-side down in olive oil and butter for 4–5 minutes per side.
Add garlic to the skillet and sauté until fragrant, then add spinach and cook until wilted.
Stir in cream, Parmesan, mustard, and red pepper flakes; simmer until sauce thickens.
Return salmon to skillet, spoon sauce over, and simmer to reheat.
Serve with pasta, rice, or crusty bread.
Notes
For a lighter version, substitute heavy cream with half and half.
