Ingredients
  

Eggs

  • 8 large eggs

Herbs

  • 1/4 cup cup parsley
  • 1/4 cup cup mint
  • 1/4 cup cup dill
  • 2 tbsp tablespoons fresh oregano
  • 2 tbsp tablespoons fresh thyme

Cheese

  • 1/2 cup cup kasseri cheese, grated

Sun-dried tomatoes

  • 1/4 cup cup sun-dried tomatoes

Pine nuts

  • 1/4 cup cup pine nuts, toasted

Olive oil

  • 3 tbsp tablespoons olive oil

Spices

  • Pinch allspice
  • Pinch cinnamon

Instructions
 

  • Toast pine nuts until golden.
  • Heat olive oil and add sun-dried tomatoes.
  • Beat eggs with herbs, spices, and cheese.
  • Pour eggs into skillet, add pine nuts, then bake at 375°F for 16 minutes.
