Red Velvet Overnight Oats (Made without Red Dye)

Ingredients
  

Oats and Dry Ingredients

  • 1 cup Rolled oats (Certified Gluten-free)
  • 2 tsp Pure vanilla extract
  • 1 tbsp Unsweetened Dutch process cocoa powder
  • 0.5 tsp Ceylon cinnamon
  • 1 tbsp Chia seeds

Wet Ingredients

  • 1 cup Almond milk
  • 1 tbsp White vinegar
  • 3 tbsp Maple syrup

Beetroot Juice

  • 1 small Small beetroot (to grate for 3 tbsp. beet juice)
  • 4 pieces Strawberries sliced
  • 0.25 cup Plain Greek yogurt
  • 2 tbsp Powdered sugar
  • 0.25 cup Chocolate

Instructions
 

  • Grate the beetroot, strain to extract 3 tbsp. of beet juice, and set aside.
  • Combine oats, cocoa, cinnamon, chia seeds, vanilla, vinegar, maple syrup, beet juice, strawberries, yogurt, sugar, and chopped chocolate in a bowl.
  • Mix well, divide into jars or bowls, cover, and refrigerate for at least 4 hours or overnight.

Notes

Use fresh beetroot for vibrant color and flavor.
