  • 1 cup red lentils rinsed
  • 1 carrot carrot diced
  • 1 stalk celery chopped
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • to taste salt and pepper
  • 2 tbsp fresh herbs parsley or cilantro, chopped

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, and celery; cook until softened.
  • Add minced garlic and cook for 1 minute. Stir in rinsed red lentils and vegetable broth.
  • Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.
  • Season with salt and pepper to taste. Garnish with chopped fresh herbs before serving.
