Red Cabbage and Carrot Coleslaw

A vibrant and crunchy coleslaw combining red cabbage and carrots, perfect as a fresh side dish.

Ingredients
  

Vegetables

  • 0.5 head Red Cabbage about four cups, grated or chopped
  • 1 pound Carrots cut, grated or spiralized

Dressing

  • 0.5 cup Apple Cider Vinegar
  • 1 tablespoon Extra Virgin Olive Oil feel free to add more if desired
  • 1 tablespoon Honey

Seasonings

  • as desired Seasonings all purpose seasonings, salt, pepper

Optional Add-ins

  • optional Dried fruit, seeds, nuts, scallions for topping

Instructions
 

  • Mix the cabbage and carrots in a large bowl.
  • Whisk vinegar, olive oil, honey, and seasonings in a small bowl, then pour half over the vegetables and toss.
  • Add remaining dressing as needed, toss again, and refrigerate for at least an hour.
  • Before serving, top with optional ingredients if desired.

Notes

This coleslaw is best served chilled and can be customized with your favorite add-ins.
