Ingredients
  

Grains

  • 1 cup uncooked quinoa

Protein

  • 1 cup cooked chicken (rotisserie)

Vegetables

  • 1/4 small red onion (chopped)
  • 3/4 cup little tomatoes (halved)
  • 5 ounces baby spinach
  • 1 mini cucumber sliced (or 1/4 English cucumber)
  • 1 avocado sliced
  • 1/2 red bell pepper chopped

Dressing & Seasonings

  • to taste Ranch dressing
  • to taste Salt & pepper
  • 1/2 tablespoon fresh parsley (chopped, optional)

Instructions
 

  • Cook quinoa according to package instructions; let cool.
  • Prep vegetables and chicken while quinoa cools.
  • Combine cooled quinoa, chicken, vegetables, and parsley in a bowl.
  • Toss with ranch dressing, salt, and pepper to taste.
