Ingredients
  

Vegetables

  • 0.5 cup bell peppers (red, yellow, green) sliced
  • 0.25 cup sweet corn
  • 0.25 cup red onion sliced
  • 1 cup shredded cheese (mozzarella or mix)
  • Salt to taste
  • black pepper to taste
  • a pinch chili flakes or paprika
  • 2 large tortillas

Instructions
 

  • Spread cheese and vegetables evenly on one tortilla.
  • Top with the second tortilla to form a sandwich.
  • Cook in a skillet over medium heat until golden and cheese melts, about 3-4 minutes per side.
  • Remove from skillet and cut into wedges.

Notes

You can add hot sauce or sour cream for extra flavor.
