Ingredients
  

Cooked Quinoa

  • 1 cup cooked quinoa

Vegetables

  • 2 pieces Persian/Lebanese cucumbers
  • 2 pieces roma tomatoes
  • 0.5 small red onion Optional soak in water for 10 mins
  • 0.5 large avocado
  • 10 pieces kalamata olives

Herbs

  • 1 handful fresh mint leaves

Dressing

  • 0.5 lemon lemon Juice of half a lemon
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • to taste Salt and black pepper

Instructions
 

  • Cook the quinoa and let it cool.
  • Dice cucumbers, tomatoes, onion, and avocado; chop olives and mint.
  • Combine all ingredients in a large bowl.
  • Whisk together lemon juice, olive oil, balsamic vinegar, salt, and pepper for the dressing.
  • Pour dressing over the salad, toss gently, and serve.

Notes

For extra flavor, let the salad sit for 10 minutes before serving.
