  • 1 lb flank steak Marinate for flavor

Grains

  • 2 cups cooked rice

Oils & Spices

  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper

Vegetables & Legumes

  • 1 cup black beans, drained and rinsed
  • 1 cup corn, cooked
  • 1 cup diced tomatoes

Toppings & Sides

  • 1 avocado sliced avocado
  • Fresh cilantro for garnish
  • Sour cream for serving
  • Salsa for serving

Instructions
 

  • Marinate the flank steak with olive oil, chili powder, cumin, salt, and pepper for at least 30 minutes.
  • Cook the steak on a grill or pan over medium-high heat until desired doneness, then rest and slice.
  • Layer cooked rice in a bowl, then top with sliced steak, black beans, corn, tomatoes, and avocado.
  • Garnish with cilantro and serve with sour cream and salsa on the side.

Notes

For extra flavor, marinate the steak longer or add your favorite hot sauce.
