Ingredients
  

Protein

  • 2 pieces boneless, skinless chicken breasts or tofu for vegetarian
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 1 cup quinoa or brown rice
  • 2 cups broccoli florets
  • 1 tablespoon lemon juice fresh

Garnish

  • optional Fresh parsley for garnish

Instructions
 

  • Cook quinoa in boiling water for 15 minutes, then fluff and set aside.
  • Season chicken with garlic powder, paprika, salt, and pepper. Cook in a skillet with olive oil for 6-7 minutes per side until cooked through.
  • In the same skillet, add broccoli with a splash of water, cover, and cook for 3-4 minutes.
  • Assemble the bowl with quinoa, sliced chicken, and broccoli. Drizzle with lemon juice and garnish with parsley if desired.

Notes

Feel free to substitute tofu or other vegetables for variety.
