Ingredients
  

Dressing

  • 0.25 cup cider vinegar preferably Bragg
  • 3.5 tbsp sugar
  • 2 tbsp sesame oil La Tourangelle for aroma
  • 2.5 tbsp sesame seeds
  • 0.5 tsp salt
  • 0.25 tsp ground ginger
  • to taste black pepper black pepper
  • 1 piece carrot shredded into matchsticks
  • 1.5 bunches cilantro
  • 2 scallions scallions
  • 0.5 head red cabbage thinly sliced using a mandoline
  • 0.5 head green cabbage
  • 0.5 cup shelled edamame
  • 0.33 cup red bell pepper diced into 1/4-inch pieces
  • 0.25 cup peanuts

Instructions
 

  • Whisk together vinegar, sugar, sesame oil, sesame seeds, salt, ginger, and pepper to make the dressing.
  • Combine shredded carrots, sliced cabbages, edamame, bell pepper, cilantro, and scallions in a large bowl.
  • Pour dressing over the vegetables and toss to combine.
  • Garnish with peanuts before serving.

Notes

For extra flavor, toast the sesame seeds before adding.
