Ingredients
  

Meat and Grains

  • 1 pound ground beef
  • 1 cup uncooked white or brown rice

Vegetables and Toppings

  • 2 cups shredded romaine lettuce
  • 1 cup halved cherry tomatoes
  • 1 can black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1 avocado sliced avocado
  • 0.5 cup sour cream or Greek yogurt

Seasonings and Oil

  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 0.25 teaspoon dried oregano
  • to taste Salt and pepper

Instructions
 

  • Cook rice in salted water until tender, then fluff.
  • Brown ground beef in olive oil, then add spices and a splash of water. Simmer for 5 minutes.
  • Prepare vegetables: shred lettuce, halve tomatoes, slice avocado, rinse beans.
  • Assemble bowls: add rice, top with beef, lettuce, tomatoes, beans, cheese, and avocado. Finish with sour cream.

Notes

Feel free to add cilantro, lime juice, or jalapeƱos for extra flavor.
