Ingredients
  

Dairy & Oils

  • 2 tbsp unsalted butter divided

Vegetables

  • 1/2 cup sweet onion, diced
  • 2 green onions green onions, diced
  • 2 cloves garlic cloves, minced

Herbs & Spices

  • 1 tsp fresh thyme, chopped
  • 1 tsp all-purpose seasoning
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp crushed red pepper flakes

Grains

  • 1 cup basmati or jasmine rice

Fruits & Vegetables

  • 2 cups pumpkin, cut into 1/2 inch cubes
  • 1 cup coconut milk
  • 1 cup water

Instructions
 

  • Melt 1 tbsp butter in a saucepan, cook onions, garlic, thyme, seasoning, pumpkin spice, and red pepper flakes for 3 minutes.
  • Add rice and stir to coat, cook for 2 minutes.
  • Add pumpkin, coconut milk, and water; cover and simmer for 25-30 minutes until liquid is absorbed and pumpkin is tender.
  • Fluff rice with a fork and serve.

Notes

Use fresh pumpkin for best flavor and adjust cooking time as needed.
