Instructions
Melt 1 tbsp butter in a saucepan, cook onions, garlic, thyme, seasoning, pumpkin spice, and red pepper flakes for 3 minutes.
Add rice and stir to coat, cook for 2 minutes.
Add pumpkin, coconut milk, and water; cover and simmer for 25-30 minutes until liquid is absorbed and pumpkin is tender.
Fluff rice with a fork and serve.
Notes
Use fresh pumpkin for best flavor and adjust cooking time as needed.
