Instructions
Heat coconut oil in a pot over medium heat.
Sauté garlic, onion, pumpkin, salt, and pimento berries for 2 minutes.
Add rinsed rice and stir to combine.
Pour in coconut milk and broth, then simmer for 30 minutes, stirring occasionally.
Reduce heat to low, cover with parchment and lid, and cook for 30 minutes until rice is fluffy. Remove thyme stems before serving.
Notes
For extra flavor, garnish with fresh herbs or a squeeze of lime.
