Ingredients
  

Dry ingredients

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt
  • 1/4 cup ground flax
  • 1/4 cup chopped pecans more for topping
  • 2 tbsp neutral oil
  • 3/4 cup milk of choice
  • 1/2 cup canned pumpkin plain, not pumpkin pie mix
  • 1/3 cup maple syrup add 2 tbsp for sweeter
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Mix dry ingredients: oats, baking powder, spices, salt, flax, pecans.
  • Whisk milk, pumpkin, maple syrup, vanilla, eggs until combined.
  • Combine wet and dry; mixture will be wet.
  • Divide into 12 muffin cups; bake 25-30 minutes until set.

Notes

Use silicone muffin cups for easy removal and less sticking.
