Ingredients
  

Pumpkin and Spread

  • 0.5 cup canned pumpkin puree
  • 0.5 cup natural style peanut butter
  • 2 tablespoons real maple syrup
  • 0.5 teaspoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 4 slices Pepperidge Farm Swirl Oatmeal bread in the Maple Brown Sugar variety
  • 1 large banana
  • as needed cooking spray cooking spray (or butter, if you'd rather!)
  • for dusting Powdered sugar and cinnamon for dusting

Instructions
 

  • Mix pumpkin, peanut butter, maple syrup, and spices until blended.
  • Spread 1 tablespoon of pumpkin peanut butter on each bread slice. Add banana slices on two slices, then assemble into sandwiches.
  • Heat skillet or panini press, lightly greased. Cook sandwiches until golden brown, flipping if using skillet.
  • Remove from heat, cool briefly, then dust with powdered sugar and cinnamon. Cut and serve.
  • Leftover pumpkin spread can be stored in an airtight container in the fridge for up to 5 days.

Notes

Use ripe bananas for best flavor and sweetness.
