cooking spray (or butter, if you'd rather!)

Powdered sugar and cinnamon
for dusting
Instructions
Mix pumpkin, peanut butter, maple syrup, and spices until blended.
Spread 1 tablespoon of pumpkin peanut butter on each bread slice. Add banana slices on two slices, then assemble into sandwiches.
Heat skillet or panini press, lightly greased. Cook sandwiches until golden brown, flipping if using skillet.
Remove from heat, cool briefly, then dust with powdered sugar and cinnamon. Cut and serve.
Leftover pumpkin spread can be stored in an airtight container in the fridge for up to 5 days.
Notes
Use ripe bananas for best flavor and sweetness.
