  • 5 large eggs large eggs
  • 0.75 cup milk (preferably whole or 2%)
  • 0.5 cup half and half
  • 0.5 cup light brown sugar
  • 1 cup pumpkin puree
  • 1.5 teaspoons pumpkin pie spice
  • 1 teaspoon pure vanilla extract

Bread

  • 1 15 oz loaf day old French bread (cut into cubes) (about 9 cups)
  • 0.666 cup light brown sugar (packed)
  • 0.666 cup all purpose flour
  • 0.5 teaspoon pumpkin pie spice
  • pinch salt pinch salt
  • 6 tablespoons unsalted butter (softened)

To serve

  • Maple syrup (to serve)

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a baking dish.
  • Whisk eggs, milk, half and half, sugar, pumpkin puree, spices, and vanilla until combined.
  • Pour mixture over bread cubes in the dish, pressing down to soak.
  • Bake for 45 minutes until golden and set.
  • Serve warm with maple syrup.

Notes

Use day-old bread for best texture and flavor.
