Pumpkin Crisp Recipe

Ingredients
  

Pumpkin Filling

  • 1 can pumpkin puree or 1 ⅔ cup homemade mashed pumpkin
  • 3 large eggs
  • ½ cup pure maple syrup
  • 2 tsp pure vanilla extract
  • 1 ½ tsp pumpkin pie spice or ground cinnamon
  • ½ tsp sea salt

Crumble Topping

  • 1 ½ cups all-purpose flour or gluten-free flour
  • cups quick oats
  • cup coconut sugar or brown sugar
  • 1 ½ tsp pumpkin pie spice or ground cinnamon
  • 10 Tbsp avocado oil

Instructions
 

  • Preheat oven to 350°F (175°C). Spray a 10-inch skillet or baking pan with oil.
  • Mix pumpkin, eggs, maple syrup, vanilla, and salt in a bowl. Pour into the prepared dish.
  • Combine dry ingredients for the topping, then mix in avocado oil until crumbly.
  • Spread crumble over pumpkin layer. Cover with foil and bake 30 minutes, then uncover and bake 15-20 minutes until golden.
  • Serve warm with ice cream. Store leftovers in refrigerator up to 5 days.

Notes

For a richer topping, add chopped nuts or seeds.
