Ingredients

  • 0.5 cup pumpkin puree, mashed
  • 1 cup runny nut butter (almond, cashew, sunflower seed, or other preference)
  • 2 eggs eggs
  • 0.25 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1.5 cups gluten free old fashioned oats
  • 3 teaspoons pumpkin pie spice
  • 0.5 teaspoon baking soda
  • pinch salt
  • 1 cup dark chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  • Mix pumpkin puree, nut butter, eggs, maple syrup, and vanilla in a large bowl.
  • Fold in oats, pumpkin pie spice, baking soda, salt, then chocolate chips.
  • Pour batter into the prepared dish and bake for 40 minutes.
  • Let cool, then cut into bars and serve warm or at room temperature.

Notes

For added flavor, sprinkle with extra chocolate chips or nuts before baking.
