  • 0.5 cup pumpkin puree, mashed
  • 1 cup runny nut butter (almond, cashew, sunflower seed, or other preference)
  • 2 eggs eggs
  • 0.25 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1.5 cups gluten free old fashioned oats
  • 3 teaspoons pumpkin pie spice
  • 0.5 teaspoon baking soda
  • pinch salt
  • 1 cup dark chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  • Mix pumpkin, nut butter, eggs, maple syrup, and vanilla until smooth. Fold in oats, spices, baking soda, and salt. Stir in chocolate chips.
  • Pour batter into prepared dish and bake for 40 minutes. Let cool slightly before cutting into bars.

Store in an airtight container for up to 3 days or freeze for longer storage.
