Pumpkin Beef Chilli

Ingredients
  

Vegetables

  • 300 g prepared pumpkin
  • 2 peppers peppers
  • 1 large onion or 2 small onions/5 shallots
  • 2 cloves garlic
  • 1 tbsp beef dripping or oil
  • 425 g beef mince
  • 1 tsp smoked/chipotle chilli flake
  • 1 tsp smoked paprika
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • to taste salt and pepper
  • 1 can kidney beans in chilli sauce
  • 1 can chopped tomatoes
  • 2 tbsp tomato puree/paste
  • 2 tbsp pickled jalapeno chilli slices

Instructions
 

  • Peel, trim and chop the vegetables.
  • Brown the beef in a skillet, then add onions and cook until translucent.
  • Add spices, peppers, garlic, and cook until fragrant. Mix in pumpkin, beans, tomatoes, and tomato paste. Add reserved liquid if needed.
  • Pour mixture into a casserole and bake at 160°C for 2 hours. Serve hot with your favorite sides.

Notes

Serve with rice or baked potatoes for a complete meal.
