Instructions
Line a 12-cup muffin tin with parchment liners.
Melt chocolate chips and coconut oil in 30-second microwave intervals, stirring until smooth. Stir in vanilla extract.
Pour a teaspoon of melted chocolate into each liner and spread evenly. Chill for 10 minutes.
Microwave peanut butter until runny, then mix in protein powder, salt, and maple syrup. Shape into discs.
Place peanut butter discs onto chilled chocolate, then cover with remaining melted chocolate. Chill for 1 hour.
Notes
Ensure peanut butter is only peanuts and salt for best results.
