Ingredients
  

Dry ingredients

  • 1.75 cups oat flour (spooned and leveled)
  • 0.5 cup whey protein powder (spooned and leveled)
  • 1.75 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.25 teaspoon kosher salt

Wet ingredients

  • 2 large eggs
  • 0.75 cup sugar (cane sugar, coconut sugar, or granulated sugar)
  • 1 cup greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup milk of choice (oat, almond or cow’s)
  • 0.5 cup plain Greek yogurt
  • 0.25 cup powdered sugar (or powdered sweetener, to taste)

Filling and coating

  • 0.25 cup plain Greek yogurt
  • 0.25 cup creamy peanut butter
  • 0.25 cup powdered sugar (to taste)

Toppings

  • as needed melted chocolate
  • as needed sprinkles

Instructions
 

  • Mix dry ingredients in a bowl.
  • Whisk eggs, sugar, yogurt, vanilla, and milk until combined.
  • Combine wet and dry ingredients to form batter.
  • Form mixture into balls and insert sticks.
  • Dip pops in melted chocolate and add sprinkles. Chill until set.
