Ingredients
  

For the Salmon

  • 4 fillets salmon fillets (6 oz each, skin-on or skinless)
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

For the Glaze

  • 0.5 cup pomegranate juice (fresh or bottled)
  • 0.25 cup orange juice (freshly squeezed)
  • 2 tablespoons honey (or maple syrup for a vegan option)
  • 1 teaspoon orange zest
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced

For Garnish

  • 0.25 cup pomegranate seeds (arils)
  • as needed slices or zest orange slices or zest
  • as needed fresh parsley or mint for garnish

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Season salmon with salt and pepper, then sear in olive oil until golden.
  • Mix pomegranate juice, orange juice, honey, orange zest, Dijon mustard, and garlic to make the glaze.
  • Brush the salmon with the glaze and bake for 10-12 minutes until cooked through.
  • Garnish with pomegranate seeds, orange slices, and fresh herbs before serving.

Notes

For extra flavor, marinate the salmon in the glaze for 30 minutes before cooking.
