Ingredients
  

Dried ingredients

  • 1.5 cups oat flour (or finely blended oats)
  • 1 scoop pistachio-flavored protein powder (whey or plant-based)
  • 4 oz light cream cheese (softened)
  • 2 tbsp pistachio butter
  • 1/4 cup chopped pistachios (for crunch inside)
  • Optional extra chopped pistachios (or crushed pistachios) for coating optional
  • Optional sweetener (honey, maple syrup, or zero-calorie sweetener) optional

Instructions
 

  • Mix oat flour, protein powder, softened cream cheese, and pistachio butter until a thick dough forms.
  • Fold in chopped pistachios, then chill in the freezer for 5 minutes or refrigerator for 10–15 minutes.
  • Scoop and roll mixture into balls, then coat with extra chopped pistachios if desired.
  • Place the balls on a tray and chill in the freezer for 15–20 minutes or in the fridge for 30–45 minutes before serving.

Notes

For best results, keep the balls refrigerated and enjoy within a week.
