Rice and Soup Mixture

shredded cheddar cheese, divided

boneless, skinless chicken breasts (or thighs)

Instructions
Preheat oven to 350°F (175°C). Grease a 9×13-inch dish.
Mix rice, soup, milk, water, and onion soup in a bowl. Pour into dish.
Sprinkle ½ cup cheese over the mixture. Season chicken with salt and pepper, then place on top.
Cover with foil and bake for 1 hour 30 minutes. Remove foil, add remaining cheese, and bake 10–15 minutes until bubbly.
Notes
Let the casserole rest for 15–20 minutes before serving to allow the rice to set.
