  • Kosher salt
  • 2 teaspoons sugar
  • 1/2 cup tri-color peppercorns, coarsely crushed
  • 1 stick butter
  • 2 cloves garlic, crushed

Instructions
 

  • Preheat oven to 475°F and place the tenderloin on a roasting rack.
  • Season the beef with salt and sugar, then press crushed peppercorns onto all sides.
  • Roast for 20–25 minutes until internal temperature reaches 120–125°F.
  • Melt butter with crushed garlic in a small saucepan; discard garlic.
  • Pour garlic butter over the roast, tent with foil, and let rest for 10 minutes before slicing.
