Ingredients
  

Pineapple

  • 4 slices fresh pineapple ½-inch thick
  • 1.5 pounds beef tenderloin trimmed
  • 3 tablespoons hoisin sauce
  • 2 teaspoons grated fresh ginger
  • 1 medium garlic clove minced
  • 2 teaspoons Dijon mustard
  • to taste Salt and black pepper Salt and freshly ground black pepper

Instructions
 

  • Mix hoisin, ginger, garlic, and mustard to make marinade.
  • Marinate beef for at least 15 minutes in the refrigerator.
  • Broil pineapple slices for 5 minutes per side until caramelized.
  • Season beef with salt and pepper; broil for 20 minutes to medium-rare.
  • Simmer hoisin, pineapple juice, ginger, soy, salt, and pepper until thickened for glaze.
  • Rest beef 5 minutes, then slice and serve with pineapple drizzled with glaze.

Notes

Ensure the beef reaches an internal temperature of 135°F for medium-rare.
