Pesto Chicken Wraps

Delicious and easy to make, these Pesto Chicken Wraps combine tender chicken, fresh vegetables, and flavorful pesto in a convenient wrap.

Ingredients
  

Protein

  • 2 cups cooked chicken, chopped
  • cup pesto add more if needed
  • 3 tablespoons grated Parmesan optional

Wraps

  • 4 large tortillas or wraps

Salad

  • 4 cups romaine lettuce, shredded
  • 1 cup cherry tomatoes, sliced

Dressing

  • ½ cup mayonnaise
  • 2 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • ¼ cup grated Parmesan
  • 2 cloves garlic
  • tablespoons capers with brine
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Mix chopped chicken with pesto until coated.
  • Blend mayonnaise, olive oil, lemon juice, Parmesan, garlic, capers, mustard, Worcestershire, salt, and pepper until smooth.
  • Toss romaine and cherry tomatoes with half of the dressing.
  • Spread salad mixture on tortillas, add pesto chicken, and roll up.
  • Optional: toast wraps in a skillet for 2-3 minutes per side until golden. Slice and serve.

Notes

For extra flavor, add more pesto or Parmesan as desired.
