Pesto Chicken Cauliflower Rice

Ingredients
  

Protein

  • 2 pieces chicken breasts, boneless and skinless
  • 0.5 cup pesto sauce
  • 2 tablespoons olive oil
  • 1 head cauliflower, riced or 4 cups store-bought cauliflower rice
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved

Garnish

  • Optional fresh basil for garnish

Instructions
 

  • Cut cauliflower into florets, then pulse in a food processor until rice-like.
  • Season chicken breasts with salt and pepper, then cook in a skillet with 1 tablespoon olive oil for 6-7 minutes per side until cooked through. Rest and slice.
  • In the same skillet, sauté minced garlic in 1 tablespoon olive oil for 1 minute.
  • Add cauliflower rice and cook for 5-7 minutes until tender, then stir in cherry tomatoes and cook for 2-3 minutes.
  • Mix sliced chicken into the skillet, pour pesto sauce over, and gently combine until well-coated.

Notes

For extra flavor, garnish with fresh basil before serving.
