Instructions
Pat the lamb chops dry with paper towels.
Combine olive oil, garlic, rosemary, salt, and pepper; rub on lamb chops and refrigerate for 30 minutes.
Heat skillet over medium-high heat until hot.
Sear lamb chops for 3-4 minutes per side until golden-brown.
Add butter and remaining rosemary; baste lamb chops as butter melts.
Let lamb chops rest for 5-10 minutes before serving.
