Cauliflower

Instructions
Wash, dry, and cut the cauliflower into florets. Pulse in a food processor until rice-like grains.
Press the riced cauliflower on a towel to remove excess moisture.
Heat olive oil in a skillet, add garlic, and cook for 30 seconds.
Add cauliflower to the skillet, cook for 5-7 minutes until tender and dry.
Remove from heat, stir in cilantro, lime juice, salt, and pepper. Serve immediately.
Notes
Ensure to press out moisture thoroughly for fluffy rice.
