Ingredients
  

Cauliflower

  • 1 head cauliflower, about 2 pounds
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Wash, dry, and cut the cauliflower into florets. Pulse in a food processor until rice-like grains.
  • Press the riced cauliflower on a towel to remove excess moisture.
  • Heat olive oil in a skillet, add garlic, and cook for 30 seconds.
  • Add cauliflower to the skillet, cook for 5-7 minutes until tender and dry.
  • Remove from heat, stir in cilantro, lime juice, salt, and pepper. Serve immediately.

Notes

Ensure to press out moisture thoroughly for fluffy rice.
