Ingredients
  

Sweet Potatoes

  • 2 large Sweet Potatoes cut into 1/2-inch rounds
  • 1/3 cup Melted Unsalted Butter
  • 1.5 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/2 teaspoon Paprika
  • 1/3 cup Maple syrup (+ 2 tablespoons)
  • 2 tablespoons additional Maple syrup
  • 1/3 cup chopped pecans
  • 1 teaspoon Thyme

Instructions
 

  • Preheat oven to 380°F / 200°C. Slice sweet potatoes into 1/2-inch rounds.
  • Toss sweet potato slices with melted butter, cinnamon, salt, paprika, and pepper. Arrange on a baking tray.
  • Bake for 20-25 minutes until tender and slightly caramelized.
  • Mix maple syrup, chopped pecans, remaining cinnamon, and thyme in a bowl.
  • Top baked sweet potatoes with the pecan-maple mixture and bake for another 8-10 minutes.

Notes

For extra flavor, garnish with feta or fresh herbs.
