Instructions
Preheat oven to 380°F / 200°C. Slice sweet potatoes into 1/2-inch rounds.
Toss sweet potato slices with melted butter, cinnamon, salt, paprika, and pepper. Arrange on a baking tray.
Bake for 20-25 minutes until tender and slightly caramelized.
Mix maple syrup, chopped pecans, remaining cinnamon, and thyme in a bowl.
Top baked sweet potatoes with the pecan-maple mixture and bake for another 8-10 minutes.
Notes
For extra flavor, garnish with feta or fresh herbs.
