Ingredients
  

olive oil

  • 1 Tbsp olive oil

garlic

  • 3 tsp minced garlic

pearled couscous

  • 8 oz pearled couscous

mixed vegetables

  • 2 cups frozen mixed vegetables defrosted

chicken broth

  • 2 cups chicken broth

onion powder

  • 1 Tbsp onion powder

smoked paprika

  • 2 tsp smoked paprika

salt

  • 1/2 tsp salt

black pepper

  • 1/4 tsp black pepper

rotisserie chicken

  • 2-3 cups diced rotisserie chicken

Instructions
 

  • Heat olive oil in a skillet, add garlic and couscous, and sauté until golden (~5 min).
  • Add vegetables, broth, onion powder, paprika, salt, and pepper; bring to a boil.
  • Reduce heat and simmer 8-10 min until broth is absorbed; stir in diced chicken.

Notes

Feel free to add your favorite herbs for extra flavor.
