Pear Cardamom Oatmeal Muffins

Ingredients
  

Dry ingredients

  • 1 cup old fashioned oats
  • 1 cup white whole wheat flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cardamom

Wet ingredients

  • ½ cup brown sugar
  • 1 egg beaten egg
  • ¼ cup olive oil (or any neutral-tasting oil)
  • 1 teaspoon vanilla extract

Fruits

  • cups fresh diced pears about 1½ medium pears
  • 2 tablespoons brown sugar
  • 2 tablespoons melted butter

Instructions
 

  • Preheat oven to 400°F (200°C). Grease a muffin tin.
  • Combine oats and milk; let sit 15 minutes.
  • Mix dry ingredients; then add wet ingredients and fold in pears.
  • Spoon batter into muffin tin. Mix butter and sugar; top muffins if desired.
  • Bake 18-20 minutes; cool slightly before serving.

Notes

For extra flavor, add a sprinkle of cinnamon on top before baking.
