Ingredients
  

Dry ingredients

  • 1 cup old fashioned oats
  • 1 cup white whole wheat flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cardamom

Wet ingredients

  • 1 cup milk
  • ¼ cup olive oil (or any neutral-tasting oil)
  • 1 egg beaten egg
  • cups fresh diced pears about 1½ medium pears
  • 2 tablespoons brown sugar
  • 2 tablespoons melted butter

Additional topping (optional)

  • 2 tablespoons brown sugar

Instructions
 

  • Preheat oven to 400°F (200°C). Grease a muffin tin.
  • Combine oats and milk; let sit 15 minutes.
  • Mix dry ingredients; stir oil, egg, sugar, vanilla, then fold in soaked oats and pears. Fill muffin cups.
  • (Optional) Mix melted butter and sugar; top muffins before baking.
  • Bake 18-20 minutes; cool slightly before serving.

Notes

Use ripe pears for best flavor and sweetness.
