Ingredients
  

Dough

  • 2 cups gluten-free flour (Bob's Red Mill 1-to-1)
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/3 cup butter (or coconut oil) for dairy-free
  • 1/2 cup Greek yogurt (or coconut-milk yogurt) plain
  • 1/3 cup peanut butter, smooth
  • 1/4 cup almond milk (or milk of choice)
  • 1 egg egg
  • 1 tbsp peanut butter, smooth
  • 1-2 tbsp water adjust as needed
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Mix dry ingredients, then cut in butter or coconut oil until crumbly.
  • Add yogurt, peanut butter, egg, and milk; stir until just combined.
  • Form dough into a circle, cut into wedges, and place on baking sheet.
  • Bake for 15 minutes until golden brown.

Notes

For a dairy-free version, use coconut yogurt and coconut oil.
