Peach Pie Cottage Cheese Bowls

Ingredients
  

Oil and flavorings

  • 1 teaspoon brown sugar
  • 0.25 teaspoon ground cinnamon

Fruits and dairy

  • 2 ripe peaches peaches (pitted, peeled and diced)
  • 2 cups low fat cottage cheese I like Good Culture
  • 2 tablespoons chopped shelled pistachios
  • Drizzle optional honey

Instructions
 

  • Heat a skillet over medium heat and spray with oil.
  • Add peaches, brown sugar, and cinnamon; cook for 2 minutes, then cool for 5 minutes.
  • Scoop 1 cup of cottage cheese into each bowl.
  • Top with half the peaches and pistachios; drizzle with honey if desired.

Notes

Use ripe peaches for the best flavor.
