Ingredients
  

Batter

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream or Greek yogurt

Peach Filling

  • 1 1/2 cups fresh peaches, peeled and diced
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup cold unsalted butter, cut into cubes

Instructions
 

  • Preheat oven to 350°F (175°C). Grease an 8x8 inch pan and line with parchment.
  • Make crumb topping: Mix flour, brown sugar, cinnamon; cut in cold butter until crumbly. Refrigerate.
  • Whisk dry ingredients; beat butter and sugar until fluffy; add eggs and vanilla.
  • Alternate adding dry ingredients and sour cream to wet mixture; fold in peaches.
  • Pour batter into pan, sprinkle crumb topping, and bake 45-50 mins until golden and a toothpick comes out clean.

Notes

Store leftovers in an airtight container; best enjoyed warm or at room temperature.
