Peach Bars with Brown Butter Crumble

Ingredients
  

Dough

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar, lightly packed
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 3/4 cup unsalted butter, cut into tablespoon-size pieces

Peach Filling

  • 4 medium peaches, pits removed about 1.4 pounds
  • 1/2 cup light brown sugar, lightly packed
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons vanilla extract
  • 1 teaspoon corn starch

Topping

  • remaining crumble topping

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9-inch square pan and line with parchment.
  • Melt butter in a saucepan until browned and fragrant. Cool slightly.
  • Slice peaches into 1/2-inch pieces and mix with sugar, cinnamon, vanilla, corn starch, and salt.
  • Combine flour, sugars, baking powder, and salt. Add browned butter and mix until crumbly.
  • Press about half of the crumble into the pan. Spread peach mixture over it, then top with remaining crumble.
  • Bake for 50-60 minutes until golden and bubbling. Cool, chill, then cut into bars.

Notes

Chill the bars before serving for best texture.
