Garlic

Spinach

baby spinach, washed

Cream Cheese

freshly grated Parmesan cheese, plus more to serve

ground nutmeg, or ⅓ of freshly grated nutmeg, or according to taste

Instructions
Cook pasta al dente, reserving 1/2 cup of pasta water before draining.
Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1-2 minutes until fragrant.
Add spinach in handfuls, seasoning with salt, until wilted but still bright green.
Stir in cream cheese and 1/3 cup pasta water. Add Parmesan cheese and nutmeg, stirring until smooth.
Add cooked pasta to the skillet, tossing to combine. Serve with extra olive oil, black pepper, and Parmesan cheese.
Notes
Add extra grated Parmesan cheese on top for an extra burst of flavor.
