  • 1 cup yellow squash, shredded 2 small or 1 medium
  • 1 large egg
  • 40 grams all-purpose flour
  • 40 grams shredded parmesan cheese
  • 1/4 teaspoon salt optional - parmesan is pretty salty
  • 1/8 teaspoon ground pepper
  • 2 tablespoons vegetable or olive oil for frying

Instructions
 

  • Shred the squash to get 1 cup firmly packed shredded squash.
  • Squeeze the squash to discard liquid and place in a bowl.
  • Beat the egg, then add remaining ingredients and stir.
  • Heat oil in a skillet, drop batter by heaping tablespoons, and cook until golden.
  • Serve immediately with Ranch dressing or sour cream.

Notes

For extra crispiness, ensure the oil is hot before adding the fritters.
