Instructions
Shred the squash to get 1 cup firmly packed shredded squash.
Squeeze the squash to discard liquid and place in a bowl.
Beat the egg, then add remaining ingredients and stir.
Heat oil in a skillet, drop batter by heaping tablespoons, and cook until golden.
Serve immediately with Ranch dressing or sour cream.
Notes
For extra crispiness, ensure the oil is hot before adding the fritters.
