  • 2 pieces ribeye or sirloin steaks (1-inch thick, about 8 ounces each)
  • 1 tablespoon canola oil (or avocado oil)
  • 3 tablespoons unsalted butter
  • 3 cloves garlic (crushed)
  • 1 sprig fresh thyme (or rosemary)

Instructions
 

  • Remove the steaks from the refrigerator 30-60 minutes before cooking to allow them to reach room temperature.
  • Pat the steaks dry with paper towels and season both sides with salt and black pepper.
  • Preheat a cast iron skillet over medium-high heat, add oil, and swirl to coat.
  • Carefully place the steaks in the hot pan and sear for 4-5 minutes on each side.
  • Add butter, crushed garlic, and thyme in the last minute, basting the steaks.
  • Remove the steaks, let them rest for 5-10 minutes before slicing.

Letting the steaks rest is crucial for juicy results.
